I was missing Dad's Mexican Sunday Dinners, so last night I ventured out and tried doing one of my own. I made some chicken tacos that were to die for!
This meal included:
Fresh, homemade salsa
Homemade re-fried beans
Salsa Chicken
Spanish Rice
I also included guacamole, sour cream, cheese, and lettuce.
I've included all the recipes so that you can try it yourself!

Homemade Salsa
Homemade Salsa
3 large tomatoes chopped
1 large onion chopped
1/2 bunch of cilantro
2-3 jalepenio peppers (bottled)
juice of one lime
juice of one lemon
1 clove garlic
1 tsp. salt
Mix 'em up and you're good to go!
I have a little chopper that I chop the veggies up with, but you could just use a knife if you wanted.
